Kagawa hontaka chilies, dried and ground into a fine ichimi powder. It is a proper domestic chili, and it does not taste much like the supermarket kind. Sharp, fragrant heat for udon, noodles, and anything that needs a kick at the last second.

Each dried pod is sorted by hand, then ground whole with the seeds in, which is where much of the heat sits.

Keep it away from humidity and direct sunlight. Once opened, use it within about three months.
